Lighter Eggs Benedict With "Hollandaise" Sauce Recipe, Perfect for Mother's Day

Eggs benedict, with its fabulously tangy hollandaise sauce, is classic brunch fare -- especially when celebrating special occasions, like Mother's Day. (Duh.) But did you know that the heavy restaurant version, where the sauce is full of butter and egg yolks, can typically be loaded with anywhere between 30 and 60 grams of fat? And while it may taste delicious, no one really needs two sticks of butter for brunch, even if it's your holiday. But let your waistlines fear not: I found a lightened-up version from the Kitchn blog that tastes just as good as the original, but has health subs a whole-grain English muffin, turkey bacon, added veggies and lighter hollandaise sauce. #NomNom!

INGREDIENTS:

For the Base:

8 slices smoked turkey bacon4 whole wheat English muffins, split in half2 tablespoons butter, softened (optional)2 teaspoons white vinegar8 large eggs

For the "Hollandaise":

1/2 cup light mayonnaise 1/2 teaspoon Dijon mustard 4 teaspoons fresh lemon juice, or to taste2 tablespoons unsalted butterKosher salt and cayenne pepper, to taste

For Assembly:

2 cups spinach leaves8 thick tomato slices, thoroughly driedKosher salt and pepper, for garnishPaprika, for garnish

INSTRUCTIONS:

Preheat to 400°F. Line a large rimmed baking sheet with aluminum foil and arrange the bacon strips in a single layer. Cook on the middle rack for approximately 20-25 minutes, until the slices reach your desired crispness. (For Eggs Benedict, I like it a little less crispy than usual, so 20 minutes usually works for me.) Remove bacon to a paper towel-lined plate and discard foil.

Arrange the English muffin halves on a separate baking sheet. Cook until toasted and lightly golden, about 8-10 minutes. Spread with softened butter, if desired. Lower oven temp to 170° (or warming temperature). Hold English muffins and bacon until eggs are poached and ready to assemble.

While the bacon is cooking, fill a medium to large saucepan with 1-1/2 to 2 inches of water and 2 teaspoons white vinegar. Bring water to a boil and then reduce heat to medium-low; water should maintain a few small occasional bubbles. Crack each egg into a small dish (I use a small sake glass), partially submerge the dish in the pan, and tip the egg into water. Cook until the whites are set and opaque, but yolks are still runny, about 2 minutes. Remove each egg with a slotted spoon to a paper towel-lined plate. Trim any excess whites, if desired.

To make the mock hollandaise, whisk the mayonnaise, Dijon, and lemon juice. Melt the butter and stir in quickly. Season with a pinch of kosher salt and a generous amount of cayenne pepper.

To assemble the Eggs Benedict, top each muffin half with a handful of spinach, followed by a tomato slice, a piece of bacon split in half, and a poached egg. Drizzle with hollandaise sauce. Sprinkle with additional salt, pepper, and paprika. Serve immediately. (Serves 4-6)

Me-Ality Finds the Perfect Jeans for Your Figure (Even Though It Looks Like an Airport Scanner)

Confession: I probably have about 20 pairs of jeans. Actually, take out the probably. I have 20 pairs of jeans. I know this because I counted last night. What I don't have? That one perfect pair. You know, the one that fits you just right; that's comfortably stretchy but never shrinks,  fades or stretches out too much. Most importantly, though, is that this perfect pair should make you look slim. Every day. Even on days you don't feel it. But now, there's a solution for that.

Needless to say, I was so excited when I heard about the Me-Ality Size-Matching Station at Bloomingdale's. How this airport scanner look-a-like works: You stand in the booth for 10 seconds while a machine measures your body. (Don't worry: You don't have to remove any clothes -- unless you're wearing a bulky outer jacket -- and no one is going to frisk you afterwards.) Once you've been measured, you get a barcode that you scan into a computer, and the result is the most amazing thing ever: a list of jeans -- brand, size and style included -- that fit you the best and that the store currently has in stock. It's even ranked in order of how perfect the fit should be. If you're looking for something specific, like skinny jeans, you can check a box and the computer will take away any denim that doesn't match. Brilliant, right?

When I scanned in my code, I got a list of 20 possible pairs. A couple of which--Paige and Joe's--I'd never tried before. A saleswoman helped me pull about 10 pairs from the list. Every pair fit. Like, every.single.pair. It kind of felt like magic. Of course, that didn't mean I liked them all (that would be magic), but it was still pretty great to be able to comfortably zip each one. After narrowing it down to two favorites, I ended up going with the number one-ranked pair on my list: Paige Skyline Skinny jeans. My coworker Anna, also ended up in a pair she'd never tried before: Adriano Goldschmied Stilt. Serious scores.

We hit up the Me-Ality at the Bloomingdale's 59th St. Flagship store in NYC, but the free service is also available at four other Bloomingdale's locations: Garden City, NY; Chevy Chase, MD; Costa Mesa, CA and Santa Monica, CA. Simply create a profile on me-ality.com and the program will help you find the right size for online purchases, too. The company's next project: bras. Which means finding the perfect one will no longer require letting a stranger measure your boobs. Don't know about you, but I'll happily get scanned for that any day.

Smart Ones Pizza Roll-Ups

Doesn't it just seem like every time you think you have your diet on track another eating occasion comes along? First, it's the Super Bowl, then Valentine's Day, Easter and now the Final Four. So what's a girl who's trying to eat healthy to do? Make gooey, cheesy snacks -- lightened up, of course. We teamed up with the chefs behind Smart Ones and created a fun, waistline-friendly, game-day recipe: Pizza Roll-Ups. And since they're crafted using Smart Ones Thin Crust Pizzas (You know, the frozen kind!), you can have 'em ready to go in a snap. Score!

INGREDIENTS:

3 Smart Ones Thin Crust Cheese Pizza1 cup tomato sauce1 Tbsp Grated Parmesan cheeseCooking Spray

INSTRUCTIONS:

Pre-heat oven to 350 F. Remove the crisping tray from each pizza and microwave each for approximately 1 minute on microwave safe plates. You want the pizza to be thawed, but not fully cooked.Once all the pizzas have been microwaved, using a pizza cutter, cut each pizza into 1" strips. You should be able to get about 6 strips per pizza.Roll each pizza strip and place upright into a greased baking dish.Pour tomato sauce on top of the pizza rolls and sprinkle with parmesan cheese.Cover and bake for 20-25 minutes, or until sauce is bubbling.Serve and enjoy!

Makes 6 servings (3 roll-ups per serving)
